The name of Chablis is recognised worldwide but despite the significance of its viticulture the town is surprisingly modest. Locals are understandably protective of the reputation of true Chablis. The soil is largely limestone, which is ideal for growing Chardonnay. The best Chablis is very much in demand and in a good vintage can demonstrate sublime finesse and minerality.
Tasting notes: The Chablis vines on this domaine spread over 12 hectares, situated at the heart of the Chablisian vineyards. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation. This Chablis is characterised by its freshness, power and tenacity. The bouquet displays a dominance of mineral notes, which are often associated with delicate touches of citrus fruit (lemon and grapefruit). This wine can be enjoyed as an excellent match for seafood or fish.
Tasting notes: From 50yo vines in the heart of Vaillons known as Sechet. This is the most forward of Billaud's premier crus with marvellous ripe, honeyed fruit and fresh lemony texture.
