The widow Clicquot’s motto was “only one quality, the finest”. She invented remuage, the method of removing the gunk out of Champagne to leave a clear sparkling wine. “Yellow Label” is a blend of two thirds Pinot Noir and Pinot Meunier and one third Chardonnay.
